In cheese production, after the curds are separated, the whey still contains about 50% of the milk solids, including most of the <a href="page.php?w=lactose">lactose</a> and <a href="page.php?w=lactalbumin">lactalbumin</a>. Whey cheese is made from those solids, which would otherwise be discarded.</p>
