A recipe for a Stilton cheese was published in 1726 by Richard Bradley, later first Professor of Botany at Cambridge University.

In 1722, another early printed reference to Stilton cheese came from William Stukeley. Daniel Defoe in his 1724 work A Tour thro' the Whole Island of Great Britain
