The term oleuropein is derived from the botanical name of the olive tree, Olea europaea.</p>

<p>Because of its <a href="page.php?w=Taste">bitter taste</a> and <a href="page.php?w=Astringent">astringency</a>, oleuropein must be partially removed or decomposed to make olives edible.</p><p>
